Boring, boring breakfasts

paleoBreakfast can be a bit of a struggle when you’re getting into the Paleo ‘swing’.

When you have young kids who are both picky AND need to be ready and out for school early, it’s even worse. There is no way that I want to be making 3 or 4 different breakfasts in order to satisfy everyone.

Unlike some proper chest-smacking Neanderthals, I find myself unable to stomach the stench of fish first thing in the morning. Bluuurrggh. Ditto last night’s leftovers (also there aren’t any). That.

For the first couple of weeks, eggs would be the go-to breakfast. The lack of toast wasn’t a problem, but the lack of texture was. I quickly found that egg after egg made me nauseous.

We’ve found a bit of a groove now, with bacon occasionally, mushrooms, avocados etc., but the real breakthrough came when a fellow Paleo friend gave me an awesome Granola recipe. It’s crunchy, it’s tasty and it ain’t eggs. Rock on.

So, here’s me sharing the (slightly adapted) recipe with you…. it’s imprecise, but then that’s Paleo!!

Paleo Granolapaleo granola

You will need:

Handful of sultanas or raisins, soaked for a couple of hours in water until they are as fat as my ass

Two handfuls of mixed seeds and nuts of your choice (almonds, pumpkin seeds, sunflower seeds, macadamia are good)

Ground cinnamon or mixed spice (half a teaspoon or to taste)

Teaspoon of almond extract or vanilla extract

Once the raisins have done soaking, blitz the whole lot of ingredients together in a food processor until it resembles squishy rubble.

paleoLay out the builder’s debris on an oven tray.

Bake it in a very low oven (around 80-100 degrees C) for as long as you can be bothered. Three hours at least. Watch it like a hawk – burned granola is worse than eggs.

When she’s nice and dry and baked, remove and leave to cool. It will crisp up as it cools down.

Add some fresh coconut, grated and maybe a few pieces of diced/sliced apple. Knock yourself out.

I like mine with almond milk, but choose your own weapon. Enjoy!
